Happy Halloween: Pumpkin Bars and little critters

Pumpkin Bars with Halloween Pumpkin and Fall Foliage from our neighborhood trees

Celebrating Halloween in the U.S prior to kids was going to a bunch of adult parties with or without costumes. I was almost too old to trick or treat when I came to America as a teenager and with two kids in tow I have fallen in love with this fun and spooky holiday all over again. The bonus of having toddlers is that they don't have an opinion on what to wear (yet), they don't eat candy so no worries about sweet binges and seeing the twins toddle around in their fluffy outfits is just as entertaining as looking at yummy food blog photos..

Speaking of yummy food, I made these super tasty pumpkin bars today to celebrate Halloween and to take in the autumn colors. I think taking the photos of the pumpkin bars was also fun as I branched out and brought the fall colors into the house to match the orange hues of the bread and pumpkins. I got this recipe from one of my twin mommy friends - Sarah who in turn got it from another friend of ours Becky (yes, another twin mom) who got it from the book Simply in Season. I love the fact that you can make this with winter squash or pumpkins and it makes use of all staple pantry items at home. No special shopping required for me other than the canned organic pumpkin!

Winter Squash or Pumpkin Bars Recipe (original source, Simply in Season)

Moist and not too sweet. These bars freeze well.
  • 2 cups winter squash or pumpkin, cooked and pureed (1 used 1 can organic pureed pumpkin)
  • 1 1/2 cups sugar
  • 3/4 cup oil
  • 4 eggs
  • 1 tsp vanilla
  • 1/2 tsp salt
Beat together in a mixing bowl.
  • 1 cup flour
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
Mix in. Pour into lightly greased 11 x 17-inch jelly roll pan. Bake in preheated oven at 350F for 25-30 minutes.

See? Super easy and fast. A great snack for adults and kids alike. Not too sweet with plenty of nutrition from pumpkins. I used canned organic pumpkin and it was equally delicious.

What cute costumes! We had quite a few toddlers in the 'hood today and it was a real treat to see them being dragged from house to house! "Me go home, Mommy!" "Just this last house, sweetie!" And everyone gave them more candy cos they are so little and so cute. Mommy's going to eat all that candy, ha! I did raid some of the loot we brought home.

Now, own up and tell me you did the same!

I miss fall leaves so much! In Florida, we don't get a proper Fall or Winter.

You are right, it's more fun with kids but adults have the greatest parties here of course with lot booze. We have never been to one but few single doctors organize it every year!
Pumpkin bars looks delicious. I loved the taste of sublte flavor of Pumpkins there and so moist! Enjoy. Hugs to you and the twins!:))

I love this recipe of yours. I am a health freak and want my children to eat healthy as well. So i am always looking for alternative options to junk food and make them healthy. These bars are fantastic. I will surely add them to my recipe file. Your photos are lovely too. Great work
