
You know the weeks were you have too much to do and not enough time to blog but you so badly want to blog because if you don't then you lose steam and the motivation to keep blogging might wane and before you know it you have blogger block....
Well that sort of happened this week and I promised myself to share with you all a great surprise recipe that turned out fabulous. I have made mashed sweet potatoes before and the first time I made it was by accident as my potatoes overcooked and I decided to go from Pallya concept to mashed. Today's adventure was intentional but it didn't become "blog-worthy" till it passed my husband's taste test.
This is a recipe that is simple and tastes great with either the bright orange sweet potato or the creamy yellow kind.
Recipe:
6 Medium Jersey Sweet Potatoes
2 Big Cloves Garlic Chopped
1 Teaspoon Butter
1/4 Cup Buttermilk
3 Tablespoons Sour Cream
Salt and Pepper to Taste
Method:
In a large pot boil sweet potatoes till fork tender and peel. Next, melt the butter in a medium high pan and add chopped garlic and saute till golden brown and turn off heat. Mash potatoes into the garlic, add buttermilk, sour cream and blend all to combine well. If needed to thin the potatoes add more buttermilk. Salt and pepper the mixture to taste.
Serve the sweet potatoes as a nice side dish. Its fast, simple, nutritious and very tasty. The sweetness of the sweet potato nicely complements the creamy buttermilk and sour cream with the garlic adding great flavor.
Edited to add: OK folks, I got confused with the naming of my veggie as yam vs sweet potato because my dear grocer had labeled it as YAM when in fact its a Sweet Potato! Thanks to all who got confused with my labeling, I did some more research and found out that sweet potatoes and yams are completely different species and sweet potato is sweeter and moist vs the yam is more starchy and not so sugary tasting!

I have seen pale coloured ones labeled as yams and the golden coloured ones as sweet potato. Did you use the pale one? It looks so good. And the bowl is kinda cute :)
Mashed yams sound yum...and the pictures look gorgeous.
I've never had mashed Yams...and the addition of Garlic is a nice touch to ANY mashed spuds.....

I guess I was using Sweet Potato and that did not get soggy at all, it was quite firm and I had to add buttermilk to smoothen it out after mashing.
